In a bowl, add curd, coriander powder, cumin powder, Kashmiri red chilli powder, kasuri methi and fennel seeds. Mix well. Now, heat oil in a kadhai set on medium flame. Add the bhindis and shallow fry them for around 3-4 minutes. Once the bhindi starts becoming soft, add salt, give it a nice mix, and transfer to a plate. In the same kadhai, add some more oil, cumin seeds, hing, chopped garlic and chopped onions. Fry on high flame until the onions turn golden brown in colour. Once done, reduce the flame to low and add slit green chillies. Next, add ginger-garlic paste, haldi, red chilli powder and water. Mix well. Add chopped tomatoes and salt. Combine everything together. Cover the kadhai with a lid and allow it to cook for 5-6 minutes. Now, switch off the flame and allow the mixture to cool down. Add the prepared curd mix and keep the flame on medium-high. Cover the kadhai again and allow the dahi to cook for some time. Finally, add the shallow-fried bhindis and mix well. Add garam masala, 4-5 tbsp of water and fresh coriander leaves. Dahi masala bhindi is ready!
