Add enough water, bring to a boil slowly, then reduce heat to a low simmer. Simmer for 1-2 hours, uncovered, skimming foam as needed.Set aside the chicken until it is cool enough to handle. Refrigerate for at least 4-5 hours or overnight. Using a ladle, large spoon, or skimmer, remove any fat and scum from the surface.Please note: Broth can be kept in the fridge for up to five days.
