When it comes to gummy sweets, texture is just as important as flavour. If the sweets are stored for too long or in the wrong conditions, they can become harder and less satisfying to chew. In an effort to maximize how long gummy sweets stay fresh and soft, Suzan Tireki at Ozyegin University in Istanbul, Turkey, and her collaborators tweaked the factors that most affect texture: the recipe’s concentrations of starch and gelatin, and the ratio of glucose syrup to sucrose1.
